Read the small print in the room name

Terrace is not Fountain View
At The Cosmopolitan, terrace rooms are sold both with and without the fountains. Look for “Fountain View” at the end of the name.
Strip View is not Fountain View
At Bellagio, the Strip View categories are tagged with a city view. The Fountain View ones are tagged with a lake view.
Assigned on arrival is not any view
Caesars Palace, Planet Hollywood and Paris Las Vegas all sell a “Room Type Assigned on Arrival”. It costs less and promises no view at all.

Can't book it, but you can ask

  • Horseshoe Las Vegas. A Las Vegas guide suggests booking a Strip View room and asking for a fountain view at check-in. There's no guarantee.
  • Flamingo. Some rooms see the fountains, but they can't be booked in advance. Ask at the front desk.

Questions

Do all Bellagio rooms face the fountains?

No. Only the categories with “Fountain View” in the name are sold with the lake. A Las Vegas guide notes that rooms on the back of the main tower don't see the fountains.

Which other hotels sell fountain view rooms?

The Cosmopolitan, Caesars Palace (in the Augustus Tower) and Planet Hollywood each sell categories named “Fountain View”. Paris Las Vegas doesn't name one, but guides report the view from its Eiffel View rooms and its front-facing balcony rooms.

Can I hear the music from my room?

A Las Vegas guide says a balcony makes the show much better to watch and to hear, which is why The Cosmopolitan's terrace rooms with a fountain view stand out.
